You can easily tell by the VDD range, power consumption, bandwidth and 1ku price. CD74HC is mostly used in more digial signal driven use cases where speed, power consumption and price are some key considerations. CD is more industrial or data acquisition applications where leakage current is a key factor while price or power consumption is not quite sensitive.
